Kitchen equipment from New India Electric

New India Electric Co, which manufactures kitchen equipment for the hospitality industry under the brand name Lincon since 1946, brings the Imperia range of kitchen equipment from Italy. The Tomato Testarossa heavy duty tomato strainer built with top quality material is a stainless steel one sifter with 0.4 Hp motor that allows one to strain up to 150 kgs of tomatoes per hour. It is also available with a meat mincer attachment for 20 kg/hr chopped meat. Restaurant, Pasta Presto and Pasta-A-Fast pasta machines that are used by restaurants, hotels and professionals for making Italian style pasta, macroni and ravioli. They are available in electric and manual versions.

Pasta Presto is the new machine with non-stick coating that guarantees safe and clean pasta. The built-in motor stretches the dough from thick to thin. Users can turn the thickness setting and cut the sheet in Tagliatelle or Fettuccine and fit any of the series of Simplex cutters like Spaghetti, Angel Hair, Trenette, Lasagnette, Pappardelle and Frilled Reginette. One can also use the Mille Gnocchi and Ravioli maker attachment. It is available in electric and manual versions.


A toast to fine stemware

The latest sensation in fine quality glassware is 'The First' collection from Zwiesel 1872. Like the Schott Zwiesel brand, both are produced by German company Zwiesel Kristallglas. It is handmade by a team of three master craftsmen blowing a maximum of 40 pieces a day.

The First is an 18-glass collection, designed exclusively by renowned sommelier Enrico Bernardo of the three-Michelin-starred Le Ciqn restaurant in Paris. Most type of glassware are based on the grape varietal or appellation. But The First avoids this kind of classification and instead looks at the typicity and style of the wine. There is a glass to suit every wine and each enhances the nose more than the palate. All of The First glasses share the same general shape, but have a different size and height. Each is thin-walled so as not to alter the temperature of the wine (a thicker glass wall may impart its latent heat to the wine).

For white wine, there are four glasses to choose from. There's a tall slender glass for pure fresh whites, a slightly shorter and wider one for young, oaky whites, a short and full shape for soft, mature white wine; and a smaller glass with a lip for aromatic white wine. As for reds, a wider and shorter glass will enhance the perfume of a young and soft red wine and pick up on its cherry fruit, while a narrower bowl will suit a fresh and rich red wine like Sangiovese better. There is also the visual and tactile appeal of the elegantly formed glasses, which cost US $198 a pair. The decanters go for US $248 each. Zwiesel 1872 glassware is exclusively available at Bohemian Crystal Company, Goa.
