Vintage Reveilo

Vintage Wines has launched it maiden brand Reveilo with four initial wine varieties,
using Italian technology and machinery to process high-quality Indian wine grapes.
The company plans to initially target the Mumbai, Pune, Nashik and Delhi markets
in the first phase and then go down south in the second. The four varieties
that Vintage has selected as its initial compendium include eternal Indian mainstays
like the Cabernet Sauvignon, Syrah and Chenin Blanc and notably, a challenging
Chardonnay.
According to Yatin Patil, Director, Vintage Wines, "At
Vintage Wines, a lot of stringent quality control measures are taken
including pre-fermentation treatment of grape juice for white wine.
This involves complete clarification with temperature and oxidation
control. In addition, introduction of maceration provides a further
range of interesting and unusual red table wines and adds flavour
and aroma to the whites. A greater understanding of malo-lactic
fermentation has enabled us to successfully inoculate dry red wines
with selected bacterial cultures to bring out this fermentation.
Filtration advances has centred on the user of membrane filtration.
Micro-filtration is used for micro-biological stabilisation before
bottling. Over and above, some of the select wines are oak-aged
in European oaks to improve their character and texture."
Kiran Patil, Director, Vintage Wines, adds, "We are also
looking at adding more varieties to the Reveilo portfolio. All of
these will however be Italian varieties for which the root stocks
are being imported right now. Vintage Wines has entered into a collaboration
with Enofly, a leading wine consultant from Italy for the wine-making
know-how. The entire equipment for the wine making has in fact been
sourced from a leading international Italy-based wine equipment
manufacturer, Velo S.p.A."
Speaking of the winery, it is entirely temperature controlled to ensure that
the wine at any stage is below 20 degrees, which in turn, helps prevent oxidation
problems. The winery has a separate tasting room, an advanced laboratory, a
well designed cellar and a spacious warehouse. The winery also houses a wine
bar.
